Simple Rice Pilaf
Ingredients
2 - 4 tablespoons butter or margarine
1 scant teaspoon salt
1/2 - 1 onion diced (personal preference)
4 cups chicken stock or vegetable stock
Directions
In small pot sauté diced onions until lightly softened, pour in rice and stir until lightly glazed and almost transparent looking. Sprinkle the salt over the rice and pour in the stock. Cook on high until boiling occurs, cover pot with lid and set to low, allow it to cook for 20-35 minutes. Turn off heat and keep covered until you are ready to serve.
